Erythritol belongs to a class of compounds called sugar alcohols. Erythritol is made of glucose with added hydroxyl (OH) groups. With only 6% of the calories of sugar, it still has 70% of the sweetness. Erythritol is found naturally in small amounts in grapes, melons, mushrooms, and fermented foods such as cheese, and soy sauce.
The food industry and consumers love it because it’s noncaloric and does not raise blood sugar levels.
